This cake is so decadent, a little goes a long way with beyond satisfactory results. After our first indulgence of one thinly sliced piece each, we saved the rest to be devoured the next morning with vanilla cashew ice-cream. It was even better straight from the fridge with a firm fudge-like texture along with that thick creamy whipped icing, it was an adventure to be savored.

May is here and summer is on its waaaay! Which means, here in my part of the world at least, the blackberry vines are blossoming and producing sweet abundant fruit – deliciously ripe and ready for the picking. Me and my people here didn’t waste a moment on that subject. We packed up a couple Friday mornings ago and headed straight for our local u-pick farm, and came home with a whopping 22 lbs of berries- half of which were blackberries.

There are feelings, emotions and deep rooted memories associated with scents of seasonal spices. The one that carries the most warmth with me is cinnamon. It’s the note of autumn, which carries into winter and brings Christmas. Okay, so apparently I’m a little more obsessed with all things chocolatey than I’ve ever been willing to admit. And since this little blog here is letting the secret out, I see no reason to hide anymore. 😉 Especially since chocolate can be healthy, energizing, and detoxifying with an extra dose of happy, it would be kind of silly selfish not to share the goodness. The thing I love most about these cupcakes is the fact that they’re made only with quinoa flour. I mean, the quinoa flour IS the all purpose flour. No starch or gums required. That’s a huge step you can cut out in the baking process if you normally whip up your own flour mix to start. Saving time on mess and clean up. This cake is like a Valentine’s Day picnic on the moon…I mean, if there was gravity and if you didn’t have to wear a space suit. Picturing it? Yesterday, our little love bug had the stomach bug. So naturally, we looked to ginger everything to help her feel better. Ginger tea…ginger essential oil- to be rubbed on her tummy and feet, along with peppermint and Young Living’s Digize diluted in coconut oil, and… ginger cookies. We’ve made it to September y’all, and fall is on its way! Temps all over the country are starting to dip, leaves are falling, and people everywhere are getting their bake on. The key to every good and tasty gluten free baking formula is, of course, the flour. It will determine texture, density, nutrient content and over all flavor. With all of this in mind and so many gluten free flour options to choose from, it can be difficult to decide which is the best mix to play with.
